    “Easy no-brainer. Have a hearty dinner waiting for you when you get home in the evening.”

    Ingredients

  • 1lbbeef stew meat
  • 4carrots, cut in chunks
  • 1onion, chopped
  • 2 -3stalkscelery, cut in chunks
  • 2 -3mediumpotatoes, cut in chunks
  • 1mediumturnip, cut in small chunks or diced
  • 1 (14 1/2 ounce) canswhole tomatoes or 1 (14 1/2 ounce) cans stewed tomatoes, undrained
  • 1dashthyme
  • 1dashoregano
  • 1pinch salt or 1pinchsalt substitute
  • 1low-sodium beef bouillon cube
  • 1 1/2 cupswater
  • Directions

  • Stir all ingredients together in slow cooker/crockpot.
  • Cover and cook all day on low.
  • Stir gently and serve with green veggies.

I didn’t have potatoes or turnips, and I skipped the bouillon cube (mine came out fine without it) but I did add zucchini, about half an envelope of onion soup mix instead of onions, and some tomato sauce as well. I also used Italian seasoning and rosemary, and a few teaspoons of hot sauce since we love our spicy food. I had this going on high for maybe 3 1/2 hours. It’s great on its own and great over rice. To my suprise my BF had seen this recipe (left open on pc) and decided to make us dinner. This never ever happens. The house had a wonderful smell and it tasted great.
