Apple Scones

  • Ingredients

  • 2cupsflour
  • 1/4 cupsugar
  • 2teaspoonsbaking powder
  • 1/2 teaspoonbaking soda
  • 1/2 teaspoonsalt
  • 1/4 cupbutter, cold
  • 1/2 cupapple, shredded( 1 medium)
  • 1/2 cupmilk
  • to tastemilk, for topping the scones
  • to tastesugar
  • to tastecinnamon
  • Directions

  • Preheat oven to 425 degrees.
  • Measure flour, sugar, b. powder, soda, and salt into large bowl. Cut in butter until crumbly.
  • Add apple and milk. Stir to form soft dough.
  • Turn out onto lightly floured board; knead gently 8 to 10 times. Pat into two 6-inch circles. Place on greased baking sheet.
  • Brush tops with milk; sprinkle with sugar and cinnamon. Score each top into six pie-shaped wedges.
  • Bake for 15 minutes or until browned and risen. Serve with warm butter andmarmalade.
  • Optional: Add 1/2 cup currants to batter.

  • “These were pretty yummy – I doubled the apple (used a heaping cup instead of half), added a teaspoon of cinnamon, and used half and half with whole wheat flour. With double of the apple I still didn’t find the apple flavour strong enough so I might put some more next time. As well, I found cutting them into 6 wedges made really small scones so I might just do quarters next time – but the scones were moist and yummy when they were warm! definitely a keeper.”
