    “This very quick recipe came from a friend who brought it to work to share regularly.”

    Ingredients

  • 1cupchopped apricot
  • 1/2 cupcurrants
  • 1/2 cupsultana
  • 1/2 cupsugar
  • 1/4 lbbutter, softened
  • 2cupsself raising flour
  • 2largeeggs, beaten
  • chopped preserved gingerroot(optional)
  • chopped pecans orwalnuts(optional)
  • Directions

  • Grease a 7’x3’x2′ loaf tin.
  • Pour a (250ml) cup of boiling water over fruit, sugar and butter.
  • Add the eggs and flour.
  • Pour into the loaf tin and bake in a moderate oven for about 45 minutes.

I used Splenda for the sugar, a scant 1/2 cup of a non-hydrogenated margarine and went with just the apricots and currents to trim back on the sugars the sultanas would have added. It was still fruity and delicious. What a treat to go with afternoon coffee! It could also be used as a very quick guest pleaser over the holidays.”

Zaar lets us convert to either !”

  • “Would be more useful if U.S. measurements were used instead of some metric — it is annoying to have to stop and convert 250 ml or l25g. Recipe is very good, (sultanas are raisins by the way) – it is very close to one I use every year instead of fruitcake which nobody in the family likes.”
