Baked Cranberry Oatmeal

    “You can substitute cherries, blueberries or raisins for the dried cranberries.”

    Ingredients

  • 3cupsskim milk, plus more for serving if desired
  • 6tablespoonspacked brown sugar
  • 1 1/2 tablespoonsmargarine
  • 2teaspoonsground cinnamon
  • 1 1/2 cupsold fashioned oats
  • 1 1/2 cupspeeled, finely chopped apples
  • 3/4 cupdried cranberries
  • 3/4 cupcoarsely chopped walnuts or 3/4 cuppecans
  • Directions

  • Preheat the oven to 350F degrees.
  • Coat a 9 in square pan with nonstick spray.
  • In a large saucepan, bring the milk, brown sugar, margarine, and cinnamon to a boil.
  • Meanwhile, in a large mixing bowl, mix together the oats, chopped apple, cranberries, and nuts; spread evenly into the prepared pan.
  • When the milk mixture begins to boil, pour out evenly over the oatmeal mixture.
  • Bake uncovered for 30-35 minutes, ore until the liquid has been absorbed and the oatmeal is tender.
  • Cut the mixture into 6 servings, scooping each out into a cereal bowl.
  • Garnish with a sliced apple (if desired) and serve with a pitcher of milk.

I also let the oatmeal sit for about five minutes before cutting and serving to allow the liquid to be soaked in, again personal preference. This will be great to reheat before work in the morning.”

I used one granny smith apple, 2% milk, cranberries & pecans.I think that even though it wasn’t a full 1-1/2 cups, the tart apple was a prominent flavor.The brown sugar was plenty to sweeten the recipe & since we don’t usually put milk or yogurt on oatmeal (pers pref), we enjoyed this recipe plain.DH was experiementing with maple syrup & with butter. He didn’t like it with syrup at all (too sweet), but thought it best with a dab of butter mixed in. DS, DD & I ate it plain. I love that this recipe can be made with staple ingredients. I usually like to make the first recipe as printed, and since I’ll be making this again I’m going to use dried cherries & add a touch of almond extract to the mixture next time.
