Baked Oatmeal

    “Here’s a yummy breakfast that also makes a pretty good dessert! Good for you, too!”

    Ingredients

  • 2cupsquick oats
  • 1largeegg, beaten
  • 1/3 cupvegetable oil
  • 1/2 cupbrown sugar
  • 1/2 teaspoonsalt
  • 1 1/2 teaspoonsbaking powder
  • 3/4 cupmilk
  • 1teaspooncinnamon( to taste)
  • 1/2 cupraisins
  • Directions

  • Preheat oven to 350 degrees F.
  • Mix together oil, brown sugar, and beaten egg.
  • Add oats, baking powder, salt, milk, cinnamon, and raisins, and mix well.
  • Pour into greased 8″x8″ pan.
  • Bake for 25- 30 minutes until done.
  • Serve with your choice- honey, maple syrup, milk, or vanilla ice cream.

  • “It holds it’s shape and crumbles a bit but it’s not a cake so it’s to be expected. After an overnight in the fridge it firmed up considerably so perhaps you need to let it fully cool. I added nutmeg and vanilla extract to this as well. Turned out yummylicious! House smelled great while it was baking!”

  • “Delicious not your average mushy oatmeal for breakfast or a snack anytime! Mine turned out like really soft oatmeal cookies which I enjoyed plain. I baked individual portions in a muffin tin. They each fell apart but I attribute that to not using real egg. I used organic gluten free quick cooking oats, egg replacer, canola oil, a bit less dark brown sugar, sea salt, gluten free baking powder, plain rice milk, double the cinnamon, dark raisins, and a peeled and chopped, in season Lobo apple. I will make this again possibly with dried cranberries.”

I did leave the raisins out but other than that i followed it exact. the taste was good but i wouldn’t make it again because of the consistancy. Mine sure did not stay together like the pictures :(“

  • “well i listened to humblhousewifes advice and i also like a more dense baked oatmeal so i reduced the baking pwd to 1/2 tsp and upped the milk by about 1/2 cup and i put walnuts and vanilla in them.. i also made them into cupcake form so i could freeze them for a quick on the go breakfast..with all these adjustments they were delicious and dense. thanks for a great starter recipe.”

I did add some grated nutmeg and allspice for extra flavour.I also used sultanas (golden raisins) instead of the raisins.The house smelled amazing!”

  • “Great recipe! Didn’t have any brown sugar, so I used white sugar and vanilla favoring instead. Added a little more cincinnamon, too. I don’t eat oatmeal cereal because I don’t like the texture of it. But I really like this. Tastes and smells like a oatmeal cookie. And the texture is almost the same as a soft oatmeal cookie. I baked it in a 9″x13″ baking pan to decrease the baking time. Thanks.”
