Banana Bread

  • Ingredients

  • 3cupsgranulated sugar
  • 1 1/2 cups shortening or 1 1/2 cupsmargarine
  • 9ripe bananas
  • 6eggs
  • 3 3/4 cupsflour
  • 1teaspoonsalt
  • 3teaspoonsbaking soda
  • 1dashcinnamon(optional)
  • 1dashclove(optional)
  • 1dashnutmeg(optional)
  • 1cupwalnuts
  • Directions

  • Mix together flour, salt, soda and spices, set aside.
  • Place 4-5 bananas and 3 eggs in blender, blend thoroughly.
  • Place remaining bananas and eggs in blender, blend thoroughly.
  • Cream sugar and shortening, blend in banana and egg mixture.
  • Mix in flour, but do not overmix.
  • Bake in greased bread tins.
  • A bundt pan also works nicely but will not hold entire recipe.
  • Bake at 350 degrees for 50 minutes, or until bread tests done.

I used half butter and half oil, as I do not use shortening or margarine, but wanted to economize a little. I was generous with the spices, especially the cinnamon and nutmeg, but I left out the nuts because I am not fond of nuts in cakes. I baked it in a 9″x13″ cake pan. The result was a cake with a wonderful moist texture and great flavour.”
