Beef Barley Veggy Soup – Crock Pot

    “A very good hearty soup, serve as a meal with crusty rolls. Freezes well.”

    Ingredients

  • 1 1/2 lbsbeef stew meat
  • 1cupgreen beans, sliced in half
  • 3/4 cupchopped onion
  • 2/3 cupuncooked barley
  • 2/3 cupfresh frozen corn kernels or 2/3 cupfresh frozen corn kernels
  • 1cupchopped celery
  • 1cupbias sliced carrot
  • 1 1/2 cupswater
  • 1teaspoonsalt
  • 1teaspoonchopped fresh thyme leaves or 1/2 teaspoondried thyme leaves
  • 1/4 teaspoonpepper
  • 1smallbell pepper, chopped
  • 2 (14 1/2 ounce) cans ready-to-serve beef broth
  • 2 (14 1/2 ounce) cans diced tomatoes with garlic, undrained
  • 1 (8ounce) cans tomato sauce
  • Directions

  • Mix all ingredients in 4-5 quart crock pot slow cooker.
  • Cover and cook on low setting 8-9 hoursor until veggies and barley are tender.

It seemed like a sin not to. :o)My only complaint is that the thyme was a little too strong for me.Next time I make this I will either cut it back or leave it out.
