    “Good hearty stew, you may want to add more seasoning. We like a little cayenne pepper added.”

    Ingredients

  • 1cup sun-dried tomatoes, not packed in oil or 1cupuse 1 can diced tomatoes (14.5 ounce) or 1 (1 1/2 ounce) cans stewed tomatoes
  • 1 1/2 lbsbeef stew meat
  • 12potatoes, medium, cut in half( 1 1/2 lbs)
  • 1mediumonion, cut into 8 wedges
  • 1 (8ounce) bags baby carrots( about 30)
  • 2cupswater
  • 1 1/2 teaspoonsseasoning salt
  • 1bay leaf
  • 1/4 cupwater
  • 2tablespoonsall-purpose flour
  • Directions

  • Rehydrate tomatoes as directed on package, drain and coarsely chop (or use canned undrained).
  • Mix tomatoes and remaining ingredients except 1/4 cup water and the flour in a crock pot slow cooker.
  • Cover and cook on low heat setting 8 or 9 hours or until veggies and beef are tender.
  • Whisk together 1/4 cup water and the flour and gradually stir into beef mixture.
  • Cover and cook in 3.5-4 quart crock pot on high heat setting 10-15 minuteslonger or until slightly thickened.
  • Remove bay leaf.

It had good ratings, and after looking at the prep and ingredients, I found that it would be the one. I was so glad that it did not take long to put together, and everything was right on hand. I used 2 pounds of stew beef, almost 16 oz of carrots, 8 rather large potatoes, and a can of chopped tomatoes. This served 8 people-without having to do all the hard work! I added some celery and a beef bouillon cube with some McCormicks Montreal Steak seasoning and used 1 can of petite diced tomatoes.I did change the method cause I was in a hurry to get dinner so I used the stove top and brownedthe beef first than added the seasonings and veggies along with the water. Let cook for a hour and half and than took a 1/4 c of soup water out of pot and added the flour and whisk together and added back to stew. My Dh ate til he was stuffed!
