Beer Batter Onion Rings

    Ingredients

  • 1cupflour
  • 1cupbeer( I prefer Budweiser)
  • 2largeonions( I prefer Vidalias)
  • vegetable oil( For Deep Fat Frying)
  • Directions

  • Put the flour into a bowl and make a well in the center.
  • Pour the beer into the well and whisk until combined.
  • Let rest, covered for 1 hour.
  • Peel onions and cut crosswise 1/3 inch thick and separate into rings.
  • Dust the onion rings with the additional flour, shaking off the excess, and coat them with the batter.
  • Working in batches, fry the onion rings in 2 inches of preheated 370 degrees, oil until they are golden.
  • Transfer them with a slotted spoon to paper towels to drain and sprinkle them with salt to taste.

I had no trouble w/the batter coating or frying, the crunch was great & I was amazed how little oil they absorbed. Despite review comments Re seasoning, I didn’t add any as DH is on a severely sodium-restricted diet.   • “These rings are yummy!I agree with mommyoffour – these have a great crisp, and it was quick and easy to make.I used Coors Light as my beer; I think this may have caused the flavor to turn out a little bland, so I took whtbxrmom’s advice and added garlic powder, seasoned salt, and table salt to the batter.I also “double dipped” the battered ring into the flour and back into the batter again to get more batter on the ring.I’ll definitely be making these again.Thanks, ThatJodiGirl!”
