Best Ever Meatloaf

  • Ingredients

  • 2eggs
  • 2/3 cupmilk
  • 3slicesbread, torn into pieces
  • 1/2 cuponion, chopped
  • 1/2 cupcarrot, grated
  • 1cup cheddar cheese, shredded (4 ounces) or 1cupmozzarella cheese
  • 1tablespoon fresh parsley, chopped or 1teaspoondried parsley
  • 1teaspoonsalt
  • 1teaspoon basil (optional) or 1teaspoon thyme (optional) or 1teaspoonsage(optional)
  • 1/4 teaspoonpepper
  • 1 1/2 lbslean beef, ground
  • TOPPING

  • 1/2 cupbrown sugar, packed
  • 1/2 cuptomato sauce
  • 1teaspoonmustard
  • Directions

  • In a large bowl, beat eggs.
  • Add milk and bread; let stand a few minutes or until the bread absorbs the liquid.
  • Stir in the onion, carrot, cheese, herbs and seasonings.
  • Add beef; mix well.
  • In a shallow baking pan, shape beef mixture into a 7 1/2 inches x 3 1/2-in. x 2 1/2-in. loaf.
  • Bake at 350 degrees for 45 minutes.
  • Meanwhile, combine topping ingredients. Spoon some of the topping over meat loaf.
  • Bake for about 30 minutes longer or until no pink remains,occasionally spooning some of the remaining topping over loaf.
  • Let stand 10 minutes before serving.

  • “This was pretty good meatloaf. I will be making it again in the future. I used 1/2 ground turkey and 1/2 ground beef chuck. I used a 5 ounce can of skimmed evaporated milk to substitute for the milk. I used sage in mine. I bake my meatloaf on a rimmed cookie sheet on top of a couple slices of bread to absorb grease. Meatloaf which bakes in a puddle of grease is just not very tasty. I will use only a 1/4 cup of brown sugar for the topping next time. I had to bake it for about 15 minutes longer than what the recipe called for. I used a meat thermometer to be sure it is done. Overall, it was a pretty good meatloaf and the leftovers made great sandwiches.”

  • “A good basic meatloaf. I had to use 4 slices bread because 3 slices didn’t absorb enough liquid. I seasoned with 1 teaspoon basil and thyme. I cooked this in a loafpan and the cooking time was just right. The meatloaf was moist and held together when sliced. The sauce is sweet and I only used about a quarter of it because a little goes a long way. Thanks.”

  • “My husband is a big meatloaf fan…so I am always trying new recipes. I have tried many and I am sorry to say that this is not the “best ever” in my book. It was just okay. I agree with another one of the comments made…that it needed to stay in the oven longer than stated. The inside was pink when I took it out of the oven at the directed time. I had to put it back in the oven for additional time. The carrots were on the crunchy side, even though they were grated. I also thought it had a strong onion taste. Probably a 1/4 cup of onions would have been fine. The sauce was overly sweet. Sorry…I would have to say Paula Deen’s Cheeseburger Meatloaf and sauce still remains the “best ever” meatloaf. “
