    “A great rice for any Mexican dinner.”

    Ingredients

  • 2cupslong grain rice
  • 1/2 cupolive oil
  • 1largeyellow onion, minced
  • 2teaspoonsgranulated garlic
  • 2teaspoonsground cumin
  • 1/2 teaspoonsalt
  • 1 (14ounce) cans Mexican-style stewed tomatoes with jalapeno peppers, diced
  • 4cupswater
  • Directions

  • In a large saucepan, heat oil over medium-high heat with cover.
  • Add rice, fry, stirring until rice is lightly browned, 3-5 minutes.
  • Stir in the minced onion, garlic, cumin and salt, fry another minute.
  • Add tomatoes with liquid plus the water.
  • Bring to a boil, reduce heat to low, cook another 15 minutes, until rice is fluffy and dry.

  • “This is overall a very good mexican rice dish. You just need to correct the liquid content. Pour the can of stewed tomatoes into a four cup liquid measuring cup, and add water to make four cups of liquid total. The taste of the rice is excellent, it’s a great sidedish to any mexican meal.”
