Cabbage and Potato Soup (Caldo Verde)

    “Traditional Portuguese soup, very good!! (The wine and food of Europe – Marc & Kim Millon) “

    Ingredients

  • 5mediumpotatoes
  • 6 1/4 cupswater
  • 3clovesgarlic, peeled
  • 4tablespoonsolive oil
  • 1/4 lb cabbage or 1/4 lbkale, kale is traditional,finely shredded
  • salt
  • freshly ground black pepper
  • Directions

  • Peel and cut up potatoes, and boil in salted water, with garlic.
  • When soft, mash and add olive oil and cabbage or kale.
  • Boil uncovered for about 3 minutes.
  • Season to taste.
  • Serve in bowls with a drop of olive oil in the bottom of each.
