Candy Apple Jelly

    Ingredients

  • 7cupsapple juice
  • 1cupred cinnamon candies
  • 8cupswhite sugar
  • 1 (1 3/4 ounce) boxes sure-jell pectin
  • 1/2 teaspoonbutter
  • Directions

  • Measure apple juice and cinnamon candies into an 8 quart saucepan.
  • Heat and stir to melt candies.
  • Measure sugar into a separate bowl.
  • Stir in fruit pectin into fruit juice in saucepan.
  • Add butter.
  • Bring to a boil (rolling) stirring constantly.
  • Quickly stir in all sugar.
  • Return to full rolling boil and boil EXACTLY 1 minute, stirring constantly.
  • Remove from heat.
  • Skim off foam and ladle into pint jars leaving 0.125 inch head space.
  • Process in a boiling water bath for 5 minutes at altitudes up to 1000 feet.

I left it sit to set for 2 full days and it never got any firmer than softset jello. I redid it and am waiting to see how it goes. The test jar in the fridge set up beautifully so maybe it has to be refrigerated to fully set. At any rate I am not redoing it again so it will be what it is-yummy. Added the peppers to the juice, heated it, added the pectin, boiled it, added the sugar, boiled again and put in jars. Really good, really easy. Thanks.”
