“The potatoes used for canning are called “B” size which are smaller to fit in the jars.For those people who live with city water (as I do) I would suggest gleaning some water from a well water person.The chemicals in city water seem to affect the results.These potatoes are wonderful for preparing soups and stews as they don’t fall apart when simmered for a long time.Try slicing and frying they are so good.We use an old ringer washer to wash them in large batches.”

“I love canned potatoes. I’ve been making them like this for years. I just wanted to state that if you have bigger taters you can simply cut them to size. I just chunk them up. I also wanted to add that RED Potatoes should NOT be canned. We tried the one year and it was a disaster. Thanks for posting this recipe I will be doing more this year.”
“This was so easy and good! I had 5 lb of baking potatoes to use up. I used pint jars. Before adding the potatoes to the jars, I put one chicken bullion cube and 1/2 tsp garlic salt in each then packed in the potatoes and covered with boiling water. One jar didn’t take so I was forced to eat it up. It was so good! Potatoes basically were very mushy. Added a little pepper and instant VERY yummy garlic mashed potatoes! With this recipe, no need to ever waste potatoes again! Thanks!”
