  • “Nice recipe, added an extra 12 cup of walnuts,2 t cinnamon + 3 t mixed spice for a darker and nuttier cake. It took alot longer to bake though at least treble the time.”

  • “libbie used thi recipe also she added 3 t of cinnamon though and 1/2 c nuts also in frosting thanks for posting this charlotte sh used the recipe alot . and was in very old black book”

  • “PERFECT!!!! I made this for a family dinner and it was delicious! I did use my grandma’s cream cheese frosting recipe instead. Thanks so much!”

  • “Fantastic, just the recipe I wanted, and it came out perfectly! I halved the quantities and made it in a bundt tin as an experiment, successful, thankfully. Still needed 45 mins at 180c. English so not that familiar with cups, easy enough for sugar etc but used 6 smallish carrots, ‘some’ walnuts and ‘some’ butter in the frosting. Loved the chuck-it-all-in-the-blender approach. Will be making this again in a hurry, thanks Charlotte!”

  • “This was pretty tasty, and definitely easy! I added 1/4 cup raisins to it also. I halved the recipe, put it in a 9″x9″ pan, and I think I baked it around 45 minutes. It seemed a little under done when I pulled it out but it was browning deeply so I took a chance. Once it cooled to warm it was perfectly done.”

  • “Love this cake!I reduced the sugar to 1-1/2 cups and it’s still plenty sweet and delightful. Also added a sprinkle of allspice and a teaspoon of vanilla.I leave the nuts out of the cake but saute some in a skillet with a little butter and sugar, then sprinkle them over the cream cheese frosting.YUM!Thanks for this great recipe, Charlotte.”

  • “Extremely easy, but for my oven a longer cooking time necessary, nevertheless very yummy. My son suggests lemon zest/juice added to the frosting instead of vanilla, which will give a zing.”

  • “this cake was very good moist and fluffy ‘now the iceing it needed more sugar or mabe i added too much cream cheese but it is a keeper “

  • “Had a birthday party and made 3 cakes , chocolate, angle food and carrot. The carrot cake was the first to go .Must mean everyone loved it.”

  • “This is the first cake i ever baked..and it turns out a succes…though i dont make the frosting just the cake alone. My husband who is the most picky eater i ever met LOVES IT A LOT!!!!he even wonder why i make for 3 servings only, he cant get enough huh..he cant even believe i baked it my self…but i did.. :-)So i recommend thisto all who love Carrot cakeand baking( just like me)”

  • “Why can’t I give this a “10”???Easy, fast, delicious!I, too, doubled the frosting, but used only 3 cups powdered sugar.I used to not make carrot cakes because they took so long–I’m so glad this was posted–thanks for sharing, Charlotte J!”

  • “These are really GREAT! I made these into mini muffins. I topped them with a french buttercream instead of the icing in this recipe. “
