    “Southern Living; living in the South, catfish is always plentiful and fresh. My family really likes it prepared this way.”

    Ingredients

  • 2/3 cupfresh grated parmesan cheese
  • 1/4 cupall-purpose flour
  • 1/2 teaspoonsalt
  • 1/4 teaspoonpepper
  • 1teaspoonpaprika
  • 1egg, beaten
  • 1/4 cupmilk
  • 5 -6catfish fillets( 2 lb.)
  • 1/4 cup butter or 1/4 cupmargarine, melted
  • Directions

  • Mix together cheese, flour, salt, pepper, and paprika in large bowl or plastic bag.
  • In another bowl, combine egg and milk; stir well.
  • Dip fillets in egg mixture; dredge in flour mixture.
  • Place fillets in a lightly greased oblong baking dish; drizzle with butter.
  • Bake at 350 degrees for 35-40 minutes or until fish flakes easily.

I never heard of swai and was cooking for 2 people who don’t like fish, one guest who did like fish and while I like fish, I rarely cook it because no one else likes it. I looked up swai and it is supposedly farmed asian catfish. I defrosted the fish and made this pretty much exactly – I didn’t have any measuring devices and I used a lot of paprika since several reviews said it was too bland. I also put in a few good shakes of this sun-dried tomato and rosemary seasoning he had. My son gave 1/2 to his girlfriend, who liked it and my other son said it was actually alright. I thought it was pretty good. Served with Alton Brown’s mac & cheese so everybody was happy.”
