Chicken and Mustard Crumble

    Ingredients

  • 500gchicken meat, chopped into bite size pieces( I use thigh meat)
  • 1mediumonion, sliced
  • 1garlic clove, crushed
  • 1cupsliced mushrooms
  • 1cupcooked pasta
  • salt and pepper
  • 1 1/2 cups2% low-fat milk
  • 4teaspoonscornstarch
  • 1tablespoonDijon mustard
  • 2slicesbread, crumbed
  • 50ggrated cheese
  • 1cupchopped parsley
  • Directions

  • Preheat oven to 200°C degrees.
  • Heat a non stick pan and sauté chicken, onion and garlic until cooked through.
  • Add mushrooms, pasta and salt and pepper.
  • Mix milk, cornstarch and mustard together.
  • Add to pan and stir until sauce has thickened.
  • Spoon chicken mixture into an ovenproof dish and sprinkle with combined cheese, breadcrumbs and parsley.
  • Bake at 200°C degrees for about 15 minutes or until crumbs are crispy and golden.

  • “Evie, I love these easy, make ahead recipes. I used chicken mince (but think the recipe would be better with chunks of chicken meat) and extra mushrooms as well as extra pasta. I doubled the sauce and added some parmesan cheese. Fabulous make ahead dinner and neither of the girls left anything on their plates. Served with some garlic bread and and salad. Without the topping this would be a great filler for my pie maker. Yummo!”
