    Ingredients

  • 3chicken breasts, skinned
  • 1teaspoonsalt
  • 1dashpepper
  • 1tablespoondried onion flakes
  • 1green pepper, seeded
  • 1clovegarlic, minced
  • 1canwhole tomato( 15 oz)
  • 1cansliced mushroom( , 4 oz)
  • 2teaspoonstomato paste
  • 1bay leaf
  • 1/4 teaspoonthyme
  • 2tablespoonspimientos, minced
  • Directions

  • Halve chicken breasts.
  • Chop pepper.
  • Wash well, and pat dry.
  • Combine ingredients in Crockpot.
  • Add chicken pieces, pushing down into liquid to thoroughly moisten and coat.
  • Cover and cook on Low setting for 7 to 9 hours.

The dish smelled wonderful while cooking (about 7 1/2 hours on low) I used an actual onion and I also used a 28 oz can of whole tomatoes instead of a 15 oz, and I also used a 15 oz can of chopped tomatoes (I love tomatoes in dishes!) I am sure that by adding flour or corn starch, the liquid in the dish can be thickened and maybe even serve over rice. Maybe! I will most likely make this again: the veggies in it are so good!
