    “This chicken noodle soup is great on a cool day.”

    Ingredients

  • 2teaspoonsbutter
  • 1cupsliced celery
  • 1cupchopped carrot
  • 1/2 cupchopped onion
  • 1smallpotato, diced
  • 1teaspoonthyme
  • 1teaspoonpoultry seasoning
  • 4 (14ounce) cans chicken broth
  • 2teaspoonschicken bouillon
  • 4ouncesegg noodles
  • 2cupscooked chicken
  • parsley
  • Directions

  • Melt butter in large pot.
  • Sauté the celery, carrot and onion for 2 minutes.
  • Add potato, thyme, poultry seasoning, chicken broth and bouilion.
  • Bring to a boil.
  • Add noodles and chicken and cook on low for 20 minutes.
  • Sprinkle with parsley.

  • “Mmmmmm…thanks for posting!The only change I made was to cook 4 chicken thighs in the stock before adding the other ingredients.If you do it, be sure and cut the bones in the thighs in half so that the marrow releases into the stock.Simmer the thighs an hour and remove the pieces to let them cool before picking the meat from them.I also substituted garlic infused olive oil for the butter when cooking the carrots and celery.”
