    “Serve on flour tortillas with cheese, guacamole, sour cream, tomatoes, and lettuce.”

    Ingredients

    For the marinade

  • 1/4 cuplime juice
  • 1/3 cupwater
  • 2tablespoonsolive oil
  • 4garlic cloves, crushed
  • 2teaspoonssoy sauce
  • 1teaspoonsalt
  • 1/2 teaspoonliquid smoke
  • 1/2 teaspooncayenne pepper
  • 1/4 teaspoonblack pepper
  • Meat

  • 1lb top sirloin steaks or 1lbboneless skinless chicken breast
  • Vegetable sauce

  • 2tablespoonswater
  • 1teaspoonsoy sauce
  • 1/2 teaspoonlime juice
  • 1dashsalt
  • 1dashblack pepper
  • 1tablespoonolive oil
  • Vegetables

  • 1largeSpanish onion, sliced thin
  • 1/2 green pepper, sliced thin
  • 1/2 red pepper, sliced thin
  • 1/2 yellow pepper, sliced thin
  • Directions

  • Combine the lime juice, water, oil, garlic, soy sauce, salt, liquid smoke, cayenne pepper, black pepper and either the sirloin OR the chicken in a Tupperware container, cover, and refrigerate at least 2 hours or overnight.
  • Discard leftover marinade.
  • Grill meat over medium flame 4-5 minutes on each side.
  • Cut meat into thin strips.
  • Set aside and keep warm.
  • Combine the 2 Tbls. water, soy sauce, lime juice, salt, pepper and olive oil.

  • cook onion and peppers in oil until brown.
  • remove from heat.
  • pour reserved mixture over onions and peppers.
  • combine meat, onions, and peppers.

My wife is a vegetarian, so I didn’t combine the meat and veggies at the end. I marinated boneless skinless chicken breasts in the marinade for about 3 hours, grilled them and then sliced them into thin strips about 3 inches long. I then put them in a small fry pan on med-low just while the veggies got done. I then added a little bit of the veggie sauce to the chicken. Fried the veggies and added the veggie sauce to the veggies and kept them separate (for my wife ;)We both love it. No need to go to the restaurant to order fajitas. This was better than at the restaurant. And it was made at home with fresh veggies. Absolutely loved the flavor of the chicken. Will make this again…a lot as Mexican is our favorite dish.Thanks”
