“These are very easy and quite yummy treats.They do taste much like a Twix candybar…and it is one of my absolute favorites.I altered the recipe procedure and application of the chocolate slightly, though.I placed the cookies on a wire rack that fit inside a large cookie sheet.I topped them with a dollop of the melted caramel and let the excess caramel run over the edges (through the rack and onto the cookie sheet…less surface to stick to when set).When the caramel was set, I made sure that I each cookie was free of the drips and could easily be lifted from the rack…I used a knife to trim any excess caramel from the sides.I then spread a spoonful of the melted chocolate on top of the caramel covered cookies, instead of dipping them.The excess chocolate again dripped through the rack onto the cookie sheet.My cookies resembled little turtles with the shortbread cookie as the base instead of pecans.Everyone loved them, and my plate was empty when I returned home from a game night with friends.”
