Cinnamon Muffins

    “Muffins are good anytime of the day.”

    Ingredients

  • 1 1/2 cupsflour
  • 1/2 cupsugar
  • 2teaspoonsbaking powder
  • 1/2 teaspoonsalt
  • 1/2 teaspoonground nutmeg
  • 1/2 teaspoonground allspice
  • 1egg, beaten
  • 1/2 cupmilk
  • 1/3 cupbutter, melted
  • TOPPING

  • 2tablespoonssugar
  • 1/2 teaspoonground cinnamon
  • 1/4 cupbutter, melted
  • Directions

  • Mix flour, sugar, baking powder, salt, nutmeg and allspice.
  • Add egg, milk and butter.
  • Stir into dry ingredients until moistened.
  • Spoon into greased or paper-lined muffin cups.
  • Bake at 400 degrees for 20 minutes or until done.
  • For topping combine sugar and cinnamon.
  • Brush top of warm muffin in butter and dip top of muffin into sugar/cinnamon mixture.

  • “These muffins were a cross between a cookie and cornbread….texture wise. The outside was that of a cookie and the middle had an under taste (and texture) of cornbread. I now see why people add s many extra ingredients to this reipe. I added cinnamon and vanilla extract directly to the batch and got a a punch of flavor that I KNOW I would nt have gotten had I used the recipe as is. The muffin wasn’t ry, but it certainly wasn’t moist either. It was on the verge of being dry. Those who find this recipe not as flavorful shuld add the nutmeg and allspice along with 1/2 tsp of cinnamon an 1/2 tsp of vanilla to the batter. THis makes the muffin a lot swetter and with more flavor and you will also not have to drizzle the topping mixture on. I also left these in for 15 minutes and nt the advised 20. I dont know. My kids liked them because they remined them of gingerbread cookies, but I really would prefer something more moist with an actual muffin/cupcake texture. Good but not great….as some one else said. Probably wont remake this one again.”

  • “I would say these are Good Not Great. I used half oil, half butter as well as half milk, half buttermilk. I also left out the nutmeg and added a whole tsp. of cinnamon to the batter. I made sure not to overbake them based on other reviews. They were done in just under 20 minutes and were not too dry. My husband couldn’t stop eating them with butter and jelly…”
