    Ingredients

  • 1tablespooninstant coffee
  • 1/2 cuphot water
  • 1/2 cup milk or 1/2 cupcream
  • 1beaten egg
  • 1/2 cupoil
  • 1 1/2 cupsflour
  • 3teaspoonsbaking powder
  • 1/3 cupsugar
  • 1teaspoonsalt
  • 1/2 cupchopped walnuts or 1/2 cupchopped pecans
  • Directions

  • Dissolve coffee in hot water and add milk or cream, beaten egg and oil.
  • Stir flour, baking powder, salt and sugar together and stir in the nuts.
  • Pour the liquid ingredients into the dry and mix only to moisten.
  • Spoon into greased muffin tin and bake 375F degrees for 15-20 minutes.

  • “These muffins were super moist and very light and tender. I agree with the other reviewers about the taste needing a little tweaking though. I doubled the coffee but think they could also use a little vanilla. The baking powder flavor was a bit strong so next time I’d try 2 1/2 tsp. and see if that helps. Loved the walnuts in them and think some mini chocolate chips would add a little variety sometimes too. “
