Cookies ‘n Cream Fudge

    “This is dangerous! I once brought a batch of these to bookclub and it disappeared immediately!”

    Ingredients

  • 2 1/2 cupssugar
  • 1/2 cup margarine or 1/2 cupbutter
  • 2/3 cupevaporated milk
  • 2cupsmarshmallow creme
  • 8ounces almond bark or 8ouncesvanilla candy coating, cut into pieces
  • 1teaspoonvanilla
  • 12Oreo cookies, broken into bite-size pieces
  • Directions

  • Line 8-inch-square pan with foil so that foil extends over sides of pan; butter foil.
  • In large heavy duty saucepan, combine sugar, margarine, and milk.
  • Bring to a boil over medium heat, stirring constantly.
  • Continue boiling 3 minutes over medium heat, stirring constantly.
  • Remove from heat.
  • Add marshmallow creme, candy coating and vanilla; blend until smooth.
  • Pour half of mixture into foil-lined pan.
  • Sprinkle cookie pieces over entire surface.
  • Top with remaining mixture.
  • Cool to room temperature.
  • Refrigerate 1 to 2 hours or until set.
  • Remove fudge from pan by lifting foil; remove foil from fudge.
  • Using large knife, cut into squares.
  • Store in refrigerator.

(I know – it’s fudge, so what did I expect? 😀 ) I actually did everything Deb’s Recipes did: reduced sugar, soft ball stage (for some reason my fudge always, but always, fails if I just go by time), 9″ pan. Poured half of the mixture into the pan, sprinkled chopped cookies on top, pressed them down a bit: topped with the rest of the fudge mixture, buttered my hands, and pressed down again. Figured it might help the crumbs to stick to the fudge. Well, it did – but I had clearly chopped the cookies too finely as there are spots here and there where the two fudge layers don’t meet through the cookie layer, and so the fudge square separates.
