4smallbaking potatoes, peeled
3tablespoonsgrated parmesan cheese
1 1/2 teaspoonswater
Preheat the oven to 400*.
Spray a baking sheet with vegetable cooking spray.
Cut each potato in half lengthwise.
Cut each half diagonally into 1/4 inch thick slices, keeping slices together.
Using a wide spatula, place each potato half on prepared baking sheet.
Press with fingers to fan slices.
In a cup, combine the margarine, oil and basil.
Brush evenly over potatoes.
Bake for 30 minutes.
In another cup combine bread crumbs, parmesan and water.
Sprinkle evenly over potatoes.
Bake until browned and tender, about 10 to 15 minutes.
