Creamy Ham Casserole

  • Ingredients

  • 2cupsfresh broccoli florets or 2cupsfrozen broccoli florets
  • 1 1/2 cupskraft shredded cheddar cheese, divided
  • 1 1/2 cupscoarsely chopped ham
  • 1 1/2 cupsrotini pasta, cooked,drained
  • 1/2 cupMiracle Whip light
  • 1/2green peppers or 1/2 red pepper, chopped
  • 1/4 cupmilk
  • Directions

  • HEAT oven to 350°F degrees.
  • MIX all ingredients except 1/2 cup of the cheese.
  • SPOON into 1 1/2-quart casserole.
  • Sprinkle with remaining 1/2 cup cheese.
  • BAKE for 30 minutes or until thoroughly heated.
  • Sprinkle with seasoned croutons, if desired.
  • MICROWAVE: Prepare as directed.
  • Microwave on HIGH 8 to 10 minutes or until thoroughly heated.

I did tweek it a little- I didn’t have any broccoli, so I used fresh spinach that I cooked a little before adding; I used regular mayo and cut it down to 1/4 cup and I added some spices- an Italian spice blend that I had on hand- not much. I also added some Italian breadcrumbs to the top with the cheese on top of that for that cut like effect. This was a perfect use for our leftover Easter ham! And it was so darn easy! The ham added a yummy smoky type flavor. I will definatly be making this again when I have left over ham.”
