    “A wonderful dish served over rice. A salad of peanuts, coconut and banana goes well with this, or on the side as condiments.”

    Ingredients

  • 4 -6boneless skinless chicken breasts
  • 2largeonions, coarsely chopped
  • 2garlic cloves, minced
  • 2tablespoonsbutter
  • 2 (14ounce) cans tomatoes with juice, crushed
  • 1teaspooncinnamon
  • 2tablespoonscurry powder
  • 1/2 cupraisins
  • Directions

  • Brown chicken in butter; add garlic and onions and saute about 2 minutes.
  • Transfer to slow cooker.
  • Combine remaining ingredients and add to cooker.
  • Cook low for 6-8 hours.
  • Serve over rice.

  • “This is really simple and quite good. I would have given 5 stars but I’d like this dish to have more zip. It could be that my curry powder isn’t particularly special, but the dish didn’t have much spice and the curry flavor wasn’t very pronounced. I even used 1-2 Tablespoons additional curry because I cut up the chicken into 1.5 inch cubes and seasoned them with salt, fresh pepper and curry powder. Then I divided the butter and browned the chicken in 2 batches, putting them in the crock pot. Then I sauteed the onions and garlic for a few minutes before adding them to the pot. I cooked it for 4 hours on high so as not to dry out the chicken and it came out perfect. We ate it with jasmine rice and a fair amount of hot pepper sauce. I might have stirred in some plain yogurt if I’d had any on hand but I didn’t. I’d recommend topping it with some fresh cilantro, which I also didn’t have on hand. I think that would go a long way to add some missing flavor. Of course, that is a personal choice. My wife, who is 7 months pregnant, inhaled it! She actually told me, without kidding, that I am not allowed to have any leftovers. She told me to make it every day! Even my 22 month old son ate 2 portions of it, so in his case the level of heat was perfect. To sum up, this a great dish that you can modify to suit your individual tastes after it is cooked by adding what you like to your portion. We will definitely make this a lot and toy with it (because that’s the fun of cooking!)”

  • “This was wonderful.The only thing I changed was to cook it for less time in the crockpot so it would not get tough.I was short on time, so I cooked it on high for 2 hours after sauteeing the breasts in butter.That would equate to 4 hours on low.The chicken was flakey and tender.The sauce was fairly spicy … and delicious.”
