Cucumber in Sour Cream Salad

  • Ingredients

  • 1mediumcucumber, thin sliced( 3 cups)
  • 1teaspoonsalt
  • 1/2 cupsour cream
  • 1tablespoonwhite vinegar
  • 2dropsTabasco sauce
  • 2tablespoonschives, Chopped
  • 1teaspoon dill seeds or 1teaspoonfresh dill, chopped
  • 1dashpepper
  • Directions

  • Sprinkle the cucumber with salt.
  • Let stand 30 minutes.
  • Drain thoroughly.
  • Dry on paper towel.
  • Combine sour cream, vinegar, tabasco, chives, dill seed and pepper.
  • Pour over cucumber.
  • Chill well before using.
  • Garnish with fresh dill.

I used White Balsamic Vinegar because it is slightly sweeter than white vinegar (personal taste). I used quite a bit more tabasco sauce and pepper. I also had to resort to using dried chives and dill because that was what I had. I salted my cukes and let them rest in a colander in the fridge for a couple of hours instead of just 30 minutes.
