Curried Cranberry Chicken Salad

    “An easy, delicious salad that uses dried cranberries (Craisins)”

    Ingredients

  • 1cup low-fat mayonnaise (plain yogurt is another possibility although I haven’t tried it) or 1cupsalad dressing( plain yogurt is another possibility although I haven’t tried it)
  • 2tablespoonslime juice
  • 1 1/2 teaspoonscurry powder( or more to taste)
  • 4 1/2 cupscooked chicken, chopped
  • 2chopped apples or 2granny smith apples
  • 1cupdried sweetened cranberries( Craisins)
  • 1cupthinly sliced celery
  • 1/2 cupchopped pecans
  • 1/4 cupchopped scallion
  • Directions

  • Combine mayonnaise, lime juice and curry powder in large mixing bowl.

I added ~1/4 c of greek yogurt, and it gave it the tanginess that I was looking for. Instead of craisins, I used 1/2c of gold raisins that i had in my cubburd and about 1/2-3/4 c of halved red grapes. Much better the next day.”

I used a yellow onion place of scallions, and we left out the apple. Still, the flavor combinations were great- who knew curry in chicken salad could be so good? We will definitely make this again. Also, we served on crackers- may be a bit rich for a sandwich for me!”

  • “I really did like this salad, but the dried cranberries were just too tart for everything else which was flavored very mildly. I plan to save this in my “favorites” folder, but I’m going to put in golden raisins in place of the Craisins. I think they would not overpower the other flavors as much, but still add a similar effect. The Craisins did add a pretty touch, but I felt they really didn’t blend well with the overall taste. With each bite that had one in it, that was all there was to taste. To really enjoy the overall salad, I would either leave them out of try the golden raisins. (I think regular raisins would be too strong a taste as well.) I have been looking for a good chicken salad recipe that does not include grapes, and this one fills the bill with that one caveat.Update – I am editing my review because I just had this salad 2 days old.The sit time mellowed the craisins, so they were just fine.I suggest if you do this you let it sit a day or two.I let mine sit 2 days, and that totally mellowed the Craisins to an acceptable level.Very nice salad!”

Use that instead.I used Green curry paste (in a jar) it was fantastic.Didn’t give it 5 stars because I thought it needed salt, but that could have been lack of seasoning on the chicken to start with.Salt and Pepper to taste is needed.”

  • “I lover making this recipe. I use Regular Hellman’s Mayo, Sun-maid CapeCod Dried Cranberries, no pecans and Green apples with the skin on. Everything i keep as directed, i really love the flavor of this chicken salad and in my opinion, it beats boring plain chicken salad any day of the week. Also a small tip, i let my cranberries sit in some boiled water for a few minutes till they plump up. thanks for a great recipe!”
