Delicious Quick Pasta & Sauce

    “Quick, easy, kids like it–tomato sauce, fresh basil, cheese. I made this for the first time tonight, have been neglecting the groceries.I made this from what I had in the kitchen. It was delicious, my 4 year old liked it too!”

    Ingredients

  • 2teaspoonsolive oil( good extra virgin preferred)
  • 1mediumonion, finely chopped
  • 2garlic cloves, minced
  • 1 (8ounce) cans tomato sauce
  • 1/4 teaspoonsalt
  • 1teaspoonthyme
  • 1/2 teaspoonred pepper flakes
  • 1/8 cupfresh basil leaf, chopped
  • 1/8 cupmozzarella cheese, shredded
  • 1/8 cupmonterey jack cheese, shredded
  • 1/8 cupcheddar cheese, shredded
  • parmesan cheese
  • 1/2 lbpasta, prepared per package directions( small pasta, shells, elbows, etc)
  • Directions

  • Heat oil over medium-high heat.
  • Add onion sauté until fragrant (2-3 minutes).
  • Add garlic, cook 3-4 minutes more, stirring often to prevent browning.
  • Add tomato sauce and dry spices.
  • Reduce heat to low, cover and simmer for 10 minutes, stirring occasionally.
  • Remove from heat, add cheeses, stir gently until melted.
  • Add basil.
  • Pour over prepared pasta, toss to coat.
  • Top with parmesan cheese.
  • Serve with hot bread.

Since I did not have fresh basil, I used 1 tsp. dried instead.And I didn’t have an onion either so that was omitted entirely.The recipe came out great, anyway.One note of caution: you might want to add the cheese at the last minute, when the pasta and its sauce are already in the serving bowl.If you add the cheese to the sauce while the sauce is in its cooking pot, you risk creating a sticky nightmare (unfortunately, I know this from past experience). “
