‘Denny’s’ Vegetable Beef Barley Soup

    “This easy to make soup is VERY close to the vegetable beef barley soup they serve at Denny’s.”

    Ingredients

  • 1/2 lbground beef
  • 1/2 bagfrozen mixed vegetables( You know, the kind with the carrot cubes, and green beans, and lima beans, etc.)
  • 1/4 cupbarley( approximately)
  • 1 (32ounce) cans beef broth
  • 1 (14ounce) cans diced tomatoes
  • Directions

  • Brown ground beef, add vegetables, tomatoes, barley, and broth.
  • Salt and pepper to taste.
  • Let it simmer for at least 30 minutes.
  • This is great for a crock pot, as the longer it cooks, the better it is.

  • “A nice basic soup recipe that needs more seasoning. I added onion and garlic to the ground round, V-8 juice, and more barley. These additions were nice but the soup is still a bit bland tasting. Close to Denny’s soup but not quite there.”

A co-worker went to Denny’s and thought the soup looked good, so she asked if they were made or frozen and they said frozen and she “oh poop” I get those at work, so she skipped the soup. We buy them in 2 liter containers.”

  • “i’ve never had denny’s soup,so i really didn’t have anything to compare this with.so here is my review,i started this about 45 minutes before i wanted to serve it. as i was browning the ground beef i seasoned the meat withthe pepper and a little bit of seasoned salt.i didn’t have the beef broth so i used 4 beef bullion cubes,with 4 cups of water.and i added1/4 cup more of barley to thicken it a little bit more.this was really a very good soup,it will be made again. thank you for posting.”

  • “This soup was a little bland for our tastes.I didn’t use the plain mixed veggies and instead subbed a roasted and seasoned Mediterranean blend.With the plain veggies, as the recipe calls for, I imagine the flavor to be even more plain.In the future, I would add garlic and sauté onion with the ground beef.I might also substitute some of the seasoned canned tomatoes that are in the markets.This may be close to Denny’s, but it just wasn’t for us…and we love beef barley soups.”
