Easy Chicken and Pasta Parmesan

  • 1tablespoon butter or 1tablespoonmargarine
  • 1lbboneless skinless chicken breast, cut into 1/ 2-inch pieces
  • 1/4 cup chicken broth (14-1/ 2 oz can) or 1/4 cuplow sodium chicken broth( 14-1/ 2 oz can)
  • 1/2 cupspaghetti sauce( 14 oz jar)
  • 1/2 teaspoondried basil
  • 1/2 teaspoonoregano leaves
  • 3cups rotini pasta (8oz) or 3cupspenne rigate, uncooked( 8oz)
  • 3/4 cupparmesan cheese, grated
  • Directions

  • In 10 inch skillet over medium-high heat, melt butter; add chicken.
  • Cook,stirringoccasionally, until no longer pink, about 3 minutes.
  • Add chickenbroth, spaghetti sauce and seasonings; heat to boiling.
  • Add uncooked pasta,stirring to coat withliquid.
  • Cover; reduce heat. Simmer 15 minutes, stirringevery 2 minutes or until most liquid is absorbed.

  • “This is a nice meal for three or, with a salad on the side, four people for lunch. Instead of spaghetti sauce from a jar, a cup of diced tomatoes … out of the can is fine .. and a couple cloves of crushed garlicwill add a fresh taste to the dish and save some money. You might want to add a little salt.”

  • “I modified this a bit but it turned out really delicious.I did step 1&2 but I had a lot of veggies leftover in my fridge so I added them.Veggies were a handful of mushrooms, 1 medium onion, 4 garlic cloves, 1/2 green pepper, 1/4 orange pepper.I then added a full 14oz can of chicken broth, a full 1 pound jar of spaghetti sauce and let it boil over the chicken and veggies.I put 4 cups of uncooked noodles in and let it simmer for aroun 25 minutes.I placed it in a cassarole dish, covered it with sharp chedder and mozzarella cheese and baked it on high for 15 more minutes.Turned out wonderful, thanks for the tip on using chicken broth!”

  • “This recipe was okay, but I had to make the same changes that others listed: I used a full can of chicken broth, and also added extra tomato sauce (my own homemade sauce), and it was still a bit dry. I do appreciate that it was quick and easy, and my kids enjoyed it, which is why I gave it 3 stars instead of 2. My biggest gripe is that it’s called Chicken and Pasta Parmesan, which brings to mind thoughts of chicken that has been breaded and sauteed. If I had had more time, I would have breaded the chicken and sauteed it in a separate pan before adding it to the mix, but I was too pressed for time. The name of this recipe definitely needs a makeover!”

  • “As written, this recipe does not have enough liquid to cook the pasta. I did make again but made some major changes. I used a whole can of chicken broth and used 26 ounces of my own marinade. I didn’t add the other spices as I put a lot of spices in my marinade. With the changes made, I was able to cook the pasta. Made for an easy, quick weeknight meal with the changes made.”

There would not be enough liquid.I also did not put in as much pasta.The taste was very good.I would make it again.”
