Erin’s Scalloped Potatoes and Ham

    Ingredients

  • 1/2 cupbutter
  • 1largeonion, diced
  • 1/2 cupflour
  • 1 1/2 cupshalf-and-half
  • 1 1/2 cupsmilk
  • 1cuppre-cooked ham, diced
  • 5cupspotatoes, thinly sliced
  • 1teaspoonsalt
  • 1teaspoonpepper
  • 1dashcayenne pepper
  • shredded cheese(optional)
  • Directions

  • Melt the butter over medium-low in a large deep pan.
  • Add chopped onions and cook until the onions are soft.
  • Add the flour and stir until the flour becomes frothy.
  • Add the half and half and milk 1/2 a cup at a time, stirring in between.
  • Add salt, pepper and cayenne pepper.
  • Bring to a boil, reduce heat.
  • Add ham, stir.
  • Add potatoes and stir to coat.
  • Pour into a buttered baking dish and put into the oven at 400F for 45 minutes, covered.
  • Uncover after 45 minutes and continue baking at 400F for 20 minutes.

I needed more liquid, but it might have been because I really let the onions cook down and used real butter so it realeased a lot of moisture in cooking. I also used 2 cups of ham just because I had it left over and needed to use it. Iused the cayanne pepper, too. just a dash didnt make it really spicey. It just had a kick. Thanks for the recipe!”
