Fall Mornings: Blueberry Apple Muffins (Free Of Sugar, Grains, & Dairy)
What a dream it would be to wake to the scent of apple, blueberry, and cinnamon swirling through the crisp air. A window is cracked; sheer curtains sway gently; natural morning light pours in.
To bite into a muffin fresh out of the oven, and melt away with its perfect mix of autumnal flavors, smiling even bigger as you realize this treat is made of pure healthy goodness. Yes, what a dream it would be indeed…
Ingredients:
1 cup coconut flour
½ teaspoon baking soda
¾ teaspoon sea salt
2 teaspoons ground cinnamon
½ cup coconut oil, melted
6 eggs
2 tablespoons maple syrup*
2 tablespoons raw honey*
¼ cup almond milk
2 teaspoons vanilla extract
¼ cup fresh blueberries
¼ cup apples, chopped (with or without skin is fine!)
*Either or both of these may be substituted with agave nectar if you wish!
Directions:
1. Preheat oven to 350 degrees F. In a medium bowl, combine coconut flour, baking soda, sea salt, and cinnamon, and mix well.
2. In a separate bowl, combine coconut oil, eggs, maple syrup, honey, almond milk, and vanilla extract, and whisk until smooth.
3. Combine wet ingredients with dry ingredients, and mix well. If mixture seems too dry, feel free to add in a bit more almond milk. Then, fold in blueberries and apples.
4. Spoon into a lined muffin tray. This should make about 8 medium-sized muffins.
5. Bake for 20-25 minutes.
