    “Fluffy, light, just sweet enough.”

    Ingredients

  • 1cupflour
  • 1cupcornmeal
  • 1/4 cupsugar
  • 4teaspoonsbaking powder
  • 1teaspoonsalt
  • 1 1/4 cupsmilk
  • 2eggs
  • 1/4 cupvegetable oil
  • Directions

  • In bowl, combine first 5 ingredients.
  • Add milk, eggs, and oil.
  • Beat for 1 minute.
  • Pour into greased (or paper lined) muffin tins.
  • Bake at 400* for 20-25 minutes.

Perfect blend of the sugar / salt and baking powder.The recipe says 6-8 muffins so I assume these would be jumbo,,because the recipe completely filled all 12 wells of my muffin pan, which has generous wells.I t hought they would rise and flow over, but they didn’t,,,stayed nice and mounded……love these….and thanks for taking the time to post this wonderful keeper…………”
