    “I adopted this recipe in the recipe adoption of February 2005.The only major change I made to this recipe is to change the cooking method from microwave to oven.I prefer to cook fish in the oven, and it only takes a couple of minutes longer.I also added measurements to the spices.DH doesn’t like curry powder, so I made the curry powder optional.This recipe is easy to double for 2 servings.”

    Ingredients

  • 1/2 lbfish fillet( any kind-I used Tilapia)
  • 2tablespoonslemon juice
  • 1/4 teaspooncurry powder( optional)
  • 1/8 teaspooncayenne pepper
  • 1clovegarlic, minced
  • 1/2 teaspoonMrs. Dash seasoning mix
  • 1/2 teaspoonchicken bouillon granule
  • 2tablespoonsbutter, melted
  • Directions

  • Preheat oven to 400 degrees.
  • Place fillets in a baking dish sprayed with cooking spray.
  • Sprinkle with lemon juice, curry, cayenne, garlic, Mrs. Dash, and boullion.
  • Drizzle melted butter over the top.
  • Bake for 10-15 minutes or until fish flakes with a fork.

  • “Wonderful! I used bottled lemon juice, mainly because I couldn’t find any fresh lemons. My husband had used them for his punch.I left out the curry and didn’t really want to use cayenne pepper so I just used black pepper and instead of Mrs. Dash, I used lemon and lime pepper. My daughter who doesn’t really like fish, rated this as a 5 star.I’ve never had or cooked Tilapia before and this was a treat. It will be a regular in our house now. Thank you.”
