Fresh Strawberry Pie

    “What could be better in berry season than Fresh Strawberry Pie? Will you have a slice?”

    Ingredients

  • 1 1/2 quartsstrawberries, hulled
  • 1cupsugar
  • 2tablespoonscornstarch
  • 1/2 cupwater
  • red food coloring, if desired
  • 1 (3ounce) packages cream cheese, softened
  • 1teaspoonfresh lemon zest
  • 1 (9inch)baked pie crusts
  • Directions

  • Mash enough strawberries to measure 1 cup.
  • Mix sugar and cornstarch in 2-quart saucepan.
  • Gradually stir in water and mashed strawberries (add 1 or 2 drops food color if deeper red color is desired).
  • Cook over medium heat, stirring constantly, until mixture thickens and boils.
  • Boil and stir 1 minute; cool.
  • Beat cream cheese and lemon peel until smooth; spread into baked and cooled pie crust.
  • Fill crust with remaining strawberries.
  • Pour cooked strawberry mixture over top.
  • Refrigerate about 3 hours or until set.
  • Store covered in refrigerator.

  • “I’m sorry, I followed the recipe exactly and I could not get this pie to turn out. Perhaps I used too many fresh strawberries in the pie crust because when I added the cooked strawberry mixture, it just oozed over the top and spilled out. It never did set up properly in the refrigerator. My dad really liked this pie, but as for myself and the other taste testers, we preferred a different strawberry recipe; so as a result, I probably won’t be making this again.”
