Fruit Sushi
We’re mixing two of our favorite foods in a refreshing way!
When it comes to sushi, I’ve always felt like a fish out of water…that is, until now! Some say traditional sushi is an acquired taste and, well, I am still on a conquest to acquire it. After recently giving sushi another chance, I decided to try a different kind of sushi, made with food I already know I love – fruit! This fruit sushi recipe, or frushie as I like to call it, is the perfect make-in-minutes healthy snack, using the fruits of your choice and leaving a lot of room for creativity! Refreshing, sweet, and delicious? What’s not to love?!
Fruit Sushi
Each spring roll wrap will make about 3-4 bites of fruit sushi
Rice Spring Roll Wrappers
Unsweetened Shredded Coconut
Fruit (I used strawberries, mango, peaches, apples, and grapes)
1/3 Cup Pomegranate juice
1 Tbsp Fresh-Squeezed Lime Juice
1 Tbsp Fresh-Squeezed Orange Juice
Directions
Prepare the spring roll wrappers as directed on their package and lay them flat on a tea towel. Next, sprinkle the shredded coconut in the center of the wrapper. The coconut acts as the rice to adhere your sushi once you roll it up. Also, it adds a fantastic texture! After that, chop your fruit, place it in the center of the wrapper, and then roll it up. Once you have a beautiful spring roll, use a sharp knife to make your sushi! For the dipping sauce just mix juices together and serve.
