  • Ingredients

  • 1clovegarlic, peeled
  • 1slim cucumber, peeled/cut
  • 4tomatoes, cut in eighths
  • 1/2 green pepper, seeded/sliced
  • 1teaspoonsalt
  • 1/4 teaspoonpepper
  • 1/2 smallonion, peeled/sliced
  • 2tablespoonsolive oil
  • 3tablespoonswine vinegar
  • 1/2 cupice water
  • Directions

  • Put all ingredients into container of electric blender in order listed.
  • Cover and blend at high speed 5-10 seconds or until ingredients are finely chopped.
  • Chill thoroughly and serve.
  • May be served with side dishes of chopped cucumber, green onion, green pepper, tomatoes, croutons.

  • “This was my first attempt at making Gazpacho.It was very good and easy.I didn’t have a green pepper while I was making it, so I subbed a roasted red pepper.By the time I served it I had a green pepper, so just chopped that up for on top along with some chopped cucumbers and a spoonful of sour cream.I served it with crusty bread and cheese for a light dinner. I also forgot the ice water, but my tomatoes were really juicy so I think it might have been a little too thin with additional water.”
