Glazed Carrots For Two

    “A yummy glazed carrot dish done in the microwave. Add salt and pepper to taste, if you wish.”

    Ingredients

  • 2tablespoonspacked brown sugar
  • 1teaspooncornstarch
  • 1/8 teaspoonground cinnamon
  • 1/3 cuporange juice
  • 1 1/2 cupssliced carrots( , sliced about 1/4-inch thick)
  • 1tablespoon butter or 1tablespoonmargarine
  • Directions

  • In a 3-cup casserole dish that’s microwave-safe, whisk together the sugar, cornstarch and cinnamon; whisk in orange juice.
  • Add carrots and stir.
  • Dot with butter.
  • Cover dish with vented plastic wrap and microwave on High for 3 minutes.
  • Partially remove plastic and stir carrots.
  • Put plastic wrap back in place and microwave on High until carrots are crisp-tender, 2 to 4 minutes longer (depending on the power of your microwave).
  • This recipe can be cut in half to serve one, but cooking time will be shorter.

My husband loved this recipe, but for me there was just something about it that made it just okay…it might have been that it was too sweet to have with dinner. I’d make it again occasionally, but for me it’s not one of those things you can have all the time. I did like the fact that you couldn’t really taste the carrots…I’m not a huge carrot person!! It is definitely a recipe to try out and if you are like me and don’t love it, it is at least very easy to make so you won’t feel as though you wasted your time.”
