Greek Catfish

    Ingredients

  • 4catfish fillets
  • 1 (10ounce) packages frozen chopped spinach, thawed and squeezed dry
  • 3/4 cupfeta cheese, crumbled
  • 1tablespoonoregano
  • 2green onions, chopped
  • 3tablespoonsbutter, melted
  • 1tablespoonolive oil
  • 2teaspoonssalt
  • 2teaspoonspepper
  • Directions

  • Preheat oven to 350ºF.
  • Grease a shallow baking pan with olive oil and place the catfish fillets in the pan.
  • Sprinkle with 1 teaspoon each of salt and pepper.
  • In a small bowl, mix the spinach, feta cheese, oregano, butter, green onions, and remaining salt and pepper until well incorporated.
  • Top each catfish fillet evenly with an equal amount of the spinach mixture.
  • Bake at 350ºF for 15 to 20 minutes, or until the fish flakes easily with a fork.
  • Serve immediately.

I eliminated the butter entirely, replacing it with more olive oil in the mix and I used the fat free version of the feta. I did add a chopped tomato and about a half dozen pitted calimatti olives. The dish was a success and is now a part of my heart healthy ouvre.”

Next time I might add sun-dried tomatoes, artichoke hearts, and/or olives to give it an even more mediterranean flair, but it was superb as is.
