    “If you want a meatless “Prince Spaghetti” night, try this one! It’ll be a regular in your family!”

    Ingredients

  • 1 (16ounce) boxespenne or 1 (16ounce) boxes rigatoni pasta
  • 5teaspoonsolive oil
  • 2tablespoonspine nuts
  • 4clovesminced garlic
  • 1packagefrozen chopped spinach, thawed and drained
  • 4plum tomatoes, chopped
  • 1/2 cupcottage cheese
  • 4ouncesfeta cheese
  • 1teaspoonoregano
  • salt & pepper
  • parmesan cheese
  • Directions

  • Start cooking pasta in large pot of boiling water.
  • In skillet, add 3 tsp olive oil and cook garlic slightly.
  • Add pine nuts and cook 2 minutes.
  • Stir in spinach and tomatoes and cook 3 minutes.
  • In a bowl combine cheeses, add oregano, salt, and pepper.
  • When pasta is cooked, add ½ to large bowl and drizzle with 1 tsp olive oil.
  • Add remaining pasta and drizzle with 1 tsp olive oil.
  • Toss well.
  • Add spinach mixture to pasta and toss.
  • Add cheese mixture and toss.
  • Top with parmesan cheese to taste.

  • “This recipe turned out very well and it tasted even better re-warmed the next day.I made a few additions – I browned a pound of ground beef with seasonings and added it to the rest of the ingredients.Also, since I did not have any spinach, I used a frozen package of creamed spinach which turned out very good.I doubled the cottage cheese and oregeno.Imixed everything together in a casserole dish and baked at 350 until hot.”

The recipe didn’t say how big of a bag of frozen spinach and I know they make a 10 oz. bag.I had a 16 oz bag and used all of it.That may have been the problem. It was very “spinach-y”. The pine nuts are a great addition to a pasta recipe, though!!I liked them enough that I’ll add pine nuts to pasta dishes more often.I used the whole 5 oz container of feta.I also had to add an additional 1/2 cup of cottage cheese because it needed it.(Perhaps due to the amt of spinach I used.) I may try again with adjustments and re-review.”

  • “This is a wonderful low-fat meal! I made a few changes to accomodate our busy lifestyle. Rather than use the plum tomatoes, I simply added a (14.5 oz) can of diced tomatoes with basil, garlic and oregano. I also used basil & tomato feta cheese to add a more robust flavor in place of the regular feta cheese.”

Next time I will probably put the cooked pasta with the spinach mixture in a baking dish, top with the cheese, and bake for 30 minutes or so. Thanks for posting!”
