    “A refreshing cool salad!”

    Ingredients

  • 4tomatoes
  • 2mediumcucumbers
  • 1sliced onion
  • lettuce, cut
  • 1sliced green peppers or 1sliced red bell pepper( I prefer red)
  • 7ouncesfeta cheese
  • 4tablespoonsolive oil
  • 3tablespoonsvinegar( a few drops of balsamic to taste is good, too)
  • 5ouncesblack olives
  • 2tablespoonscapers(optional)
  • oregano, and/or basil
  • salt and pepper
  • Directions

  • First wash all the vegetables very well.
  • Slice the tomatoes in thin quarters.
  • Peel and slice thinly the cucumbers.
  • Add the cucumbers, lettuce, oregano, black olives, onion, green or red pepper, and the caper (optional).
  • Dress the salad with the olive oil, vinegar, and salt and mix well.
  • Add the feta cheese broken into small pieces.

If you do use real feta like me, it’s sometimes tricky to find real goat’s milk feta at the store, because they never label the packagewhen it’s cows’ milk.
