Grilled Chicken Satay

    “Toss aside your peanut butter and jelly sandwiches, little kids, and see how the big kids like their peanut butter! :)”

    Ingredients

  • 1/2 cupunhomogenized unsweetened peanut butter
  • 1/2 cupwater
  • 1/4 cupsoy sauce
  • 4clovesgarlic, pressed
  • 3tablespoonslemon juice
  • 2tablespoonsfirmly packed brown sugar
  • 3/4 teaspoonground ginger
  • 1/2 teaspooncrushed red pepper flakes
  • 4boneless skinless chicken breast halves
  • 1scallion, sliced,for garnish
  • Directions

  • In saucepan cook peanut butter, water, soy sauce, garlic, lemon juice, brown sugar, ginger, and red pepper over medium heat for 1 minute.
  • Cool sauce, and remove and discard garlic from sauce.
  • Divide sauce into two parts.
  • Cut chicken into 1″ strips, threading onto metal skewers.
  • If bamboo skewers are used, soak for 20-30 minutes before using.
  • Oil grid on grill with non-stick spray before heating.
  • Grill chicken, covered, over medium-hot heat, 6-8 minutes, turning once.
  • Baste with half sauce during cooking and serve with remaining sauce garnished with sliced scallions.

He used it to dip his burger… LOL I made this several times because my kids requested it, it’s restaurant quality. If you find the sauce too thick, add a little bit more water and keep stirring until you find the right consistency. I used my George Foreman grill.”

  • “Our whole family really loves this recipe. (includes small kids) I did as some others suggested and used part of the suace to mariniate the chicken in. There is just enough sugar in this to create a nice carmelization on the chicken when put on the grill without ever burning. As many times as we have made it, I have never discarded the garlic. I use a low sodium tamari sauce in place of the soy sauce. The natural peanut butter is a a must for flavor and texture. For us, a little goes a long way in the dipping department. That’s OK, plenty more sauce to use later on b/c it stores well in the fridge. I make this for company because it presents so well and I have had several requests for the recipe. I usually serve this with Spicy Asian Coleslaw #16870. Thanks Sue L!”
