    Ingredients

  • 1lblean ground beef
  • 1onion, chopped
  • 3carrots, sliced into rounds
  • 1 (400g) cans chopped tomatoes
  • 1 1/4 cupsbeef stock
  • 1teaspoonWorcestershire sauce
  • 1teaspooncornflour
  • 1tablespoonchopped mixed herbs or 1teaspoondried mixed herbs
  • 2tablespoonsolive oil
  • 2garlic cloves, crushed
  • 3largepotatoes, par-cooked and sliced
  • salt and pepper
  • Directions

  • Preheat oven to 350F degrees.
  • Stir fry the meat and onions in a large pan until browned.
  • Add the carrots and tomatoes to the pan.
  • Stir in the stock, with the cornflour blended in, and the herbs.
  • Add the Worcestershire sauce.
  • Bring to the boil and simmer 2-3 minutes, season to taste.
  • Transfer to a shallow ovenproof dish.
  • Mix the oil, garlic and seasoning together.
  • Layer the potatoes on top of the meat mixture, brushing liberally with the garlic oil.
  • Cook for 30-40 minutes, until potatoes are tender and golden.

  • “A pretty good recipe, although I did have to make a couple adjustments. I wasn’t sure how big a tin of tomatoes to use and settled on 400g, which is a small tin in the UK. I also had to simmer for longer than 3-4 minutes and add more cornflour to get the mixture to thicken up to the point where I was happy with it. I didn’t peel the potatoes and again the recipe does not specify how long to boil them for but I decided on about 10 minutes. Once all that was sorted, the dish went into the oven as directed and came out very yummy indeed. Made enough for 3 large servings or 4 with a side dish or salad.”
