  • “THANK YOU for this simple and ever so tasty side dish. It looks “awful” when you first stir it up but once it starts bubbling and browning in the oven…YUM! I’ll definately make this again and again for that “different” potato dish. (P.S. I sprinkled on fresh bacon bits when I put on the cheese the last 5 minutes)”

  • “This has been our go to Holiday potatoes for years and are a must with Easter Ham. There are many hash brown casseroles out there but we like the simplicity of this (as the kids say no yucky stuff like olives!). My daughter loves these so I often make just for us but freeze 1/2 of the batch before baking for another meal. I also add onions ‘cuz I put onion in just about everything.”

  • “This has been a standard in my house for years. When I made it for the in-laws, they started requesting it at all the family gatherings!I use 32 ounces of potatoes and mix in the 2 cups of cheddar instead of sprinkling it on top. Then I also add a crushed potato chip topping.Crush up enough chips to cover the top, then drizzle about 4 tbls of melted butter over the top.”

  • “Ummm, ummmmm, good! Not to heavy and not too cheesy.Everyone in my family liked and ate this, which is GREAT!I did add onions and used light sour cream and 98% fat free soups. This recipe will be in my regular cooking routine.”

  • “What’s not to love about this dish?! Easy, tasty, and ooey-gooey rich. Thanks Chef Nichol for a true winner. Made for PAC Spring 2009.”

  • “My faveorite potato dish. Tried to call my mom to get “our” recipe but she isnt answering the phone. Looked it up here and found it. On top we mix melted butter with crushed cornflakes. Delicious!!”

  • “This is the best hashbrown casserole I have ever eaten. I usually only make it Christmas morning but am getting hounded to make it all the time. I can’t even eat other casserole’s after this. It is way better than Cracker Barrel’s!”

  • “Very good! Creamy and delicious..my family loved it. Thanks for posting!….Gina”

  • “DH loves this and we make it for the holidays even though you know there will be mashed potatoes.I use a little more butter and no milk, then add crushed cornflakes with melted butter on top”

  • “This was terrible! I followed the recipe exactly and used cream of chicken soup, and I hated it. I threw mine out, I couldn’t even choke it down…my boyfriend somehow managed to eat it and said it was ok but to never make it again.”

  • “Thanks for an easy, delicious recipe. I used low fat sour cream, and it worked out just great. I too added diced ham to make this a main dish. It was a real hit with the family.”

  • “Yummy! I cut the sour cream by a third, and added 1/2 cup diced ham. Perfect, thanks!”

  • “This is great…I just love it..I am cooking for my Brother and his wife. I have been making meals for them and they love it. Oh yes it freezes well. That is what I do for them I seal a meal dinners for them. Thank You for a wonderful recipe to make my family. Hugs”

  • “This was awesome.. and old favorite that I only remembered when I saw your recipe. I used the cream of chicken soup and a little more cheese, and some shredded hasbrown poatoes. Truly a family favorite!”

  • “Kids ate this one in no time flat!I did add crushed cornflakes w/2 Tbsp. melted butter to the topping.Easy, good recipe. Will make again.”

  • “Very easy and tasty; I halved the recipe, used cream of chicken soup, frozen O’Brien potatoes, and lots of sharp cheddar. Some bits of bacon or ham would have been good in it too.”

  • “I used nofat sour cream and 1 small can of condensed cream of mushroom soup instead.I think that I’ll try cheese or celery, or chicken soup next time. (I’m not a big fan of mushrooms).A little watery after I took it out of the oven.Let it sit 5-10 minutes and it turned out ok.Might add diced ham and green onion pieces to make it a little more colorfull and a complete breakfast!”
