Honey Mustard Pasta Salad

    “This is a one dish meal that will work with ham or chicken, and can be expanded. Broccoli could also be used. Cooking is a creative sport.”

    Ingredients

  • 1cupdry pasta( I like spiral)
  • 1cupcooked ham, diced( OR cooked chicken)
  • 1/2 cupdiced tomato
  • 5tablespoonshoney
  • 3tablespoonsmustard( not the bright yellow stuff)
  • 2tablespoonswine vinegar
  • 1/2 teaspoonground black pepper
  • 1garlic clove, minced
  • 1/4 cupcheddar cheese
  • Directions

  • Cook pasta in 2 quarts of salted boiling water until done to taste (for me, 8 minutes is right).
  • While pasta is cooking, add mustard, honey, vinegar,pepper, and garlic to the bottom of a serving dish.
  • Add hot drained cooked pasta, ham, and tomatoes to the dish and toss until coated by the dressing.
  • Top with cheddar cheese.

On this occasion I left out the chicken/ham and just added lightly steamed broccoli but I will definately make this again with chicken. I also tripled the quantity and this was ample for four servings as a side dish. Really yummy, thanks Bill! Oh and I forgot the vinegar, but it didn’t seem to matter, and I used a seeded mustard.”
