    “This recipe contains no potatoes.It gets it name from the look of the candy. I have not tried this recipe myself. It is for an ISO request.Recipe says you can also dip in melted chocolate for Easter eggs.”

    Ingredients

  • 1/4 cupsoftened butter
  • 4ouncescream cheese, softened
  • 1teaspoonvanilla extract
  • 1 (16ounce) packages confectioners’ sugar
  • 7ouncessweetened flaked coconut( 2 1/2 cups)
  • 1tablespoonground cinnamon
  • Directions

  • NOTE: Be sure to use regular cream cheese, not whipped or reduced fat type.
  • In a large bowl, cream together the butter and cream cheese.
  • Add vanilla and confectioners’ sugar.
  • Beat until mixture forms a ball.
  • Stir in coconut with a spoon.
  • Roll the mixture between your hands to form small potato-shaped candies or roll into small balls.
  • Place cinnamon in a shallow dish and roll the balls in it.
  • Place the balls on a cookie sheet and chill for about 1 hour or until firm.
  • If you prefer “dirtier potatoes” roll the candy a second time after they have chilled.
  • Alternatively dip in melted chocolate for Easter eggs.

  • “Great recipe! I live overeseas so I have to take what I can find in the grocery store at times. So I could only get reduced fat tub cream cheese, but they still turned out fine! The rolling process was a little sticky/difficult but they’ve hardened up in the fridge quite nicely. Really delicious – same results as others a few others regarding quantity. My batch turned out to be about 3 dozen or so, but since I had problems rolling them mine were fairly large.   • “While the end result was incredibly tasty and very cute, I can’t help but scratch my head over the measurements of these ingredients. 7 ounces is actually just less than 1 cup (I’m Canadian… I can’t measure in ounces, so I get Google to translate into cups). By then I had already put 16 ounces (2 cups) of icing sugar into my recipe and didn’t know if I should had 2.5 cups, or 7 ounces (just under 1 cup). So I added 7 ounces, and the end result was too soft to roll into balls. I’m guessing I should have added 2.5 cups of coconut, which means about 5 cups of icing sugar? Anyways, I was confused so I just put the stuff in the fridge, let it harden, and then tackled the rolling into potato shapes after that. Still tasted delicious :)”
