Italian Wedding Soup

  • Ingredients

  • 1/2 lblean ground beef
  • 1egg, slightly beaten
  • 2tablespoonsbreadcrumbs
  • 1tablespoonparmesan cheese
  • 1/2 teaspoondried basil
  • 1/2 teaspoononion powder
  • 5 3/4 cupschicken broth
  • 2cupschopped escarole or 2cupschopped spinach
  • 1/2 cuporzo pasta, uncooked
  • 1/3 cupfinely chopped carrot
  • grated parmesan cheese
  • Directions

  • In medium bowl combine, meat, egg,bread crumbs, parmesan cheese, basil& onion powder; shape into 3/4″ balls.
  • In large sauce pan, heat broth to boiling; stir in spinach, orzo, carrot& meatballs.
  • Return to boil;reduce heat to medium.
  • Cook at slow boil for 10 minutes or until orzo is tender.
  • Stir frequently to avoid sticking.
  • Serve with additional Parmesan cheese sprinkled on top.

So good that I am making it for my husband and myself tonight!I did make a few changes – I kind of combined two recipes where I made my own stock at the beginning by simmering chicken stock with carrots, herbs, celery and onions.And, I added fresh chopped sage and lemon juice to the meatballs and sauteed them in a dry frying pan just until they were browned to give them a more pleasing color. Then I added them to the broth with the spinach (used frozen chopped) and orzo (I just love orzo).I also added crushed tomatoes, fresh minced garlic, lemon juice and parmesan cheese at the very end and simmered for another 5 minutes or so.Made garlic parmesan toast to go along with it.I love the recipe – and am so glad I found it!”

  • “This was okay, but I think the meatballs definitely need to be browned first and put in the soup just long enough to heat them through. The boiled meat didn’t look appetising in the soup and it also released a lot of fat into the soup, which I had to spend ages skimming off. The overall flavour was good though.”

For the meatballs I used a mixture of ground beef and ground Italian sausage and added garlic (doesn’t everything Italian need- wait.. make that, doesn’t everything need garlic!) and fresh finely chopped onion. I also added a bit of garlic and onion to the stock. Other then that and the frozen spinach I used, I followed the recipe. It was really good and I will make this again. If I use sausage again, I will bake them a bit to render off some of the fat!”
