    “I found this recipe and am posting as a follow up to “Preserved Lemons.””

    Ingredients

  • 1/4 cuppreserved lemon
  • 3teaspoonsfresh lemon juice
  • 1teaspoonextra virgin olive oil
  • 1/4 cupminced fresh mint
  • 2teaspoonsminced fresh parsley
  • 1clovegarlic
  • 1/4 teaspoonpepper
  • 6plum tomatoes
  • 1green pepper
  • 1red onion
  • 1avocado, peeled and cut into 1/2 inch cubes
  • 1cupkalamata olive
  • 4ouncesfeta
  • 6cupsmixed salad greens
  • Directions

  • Rinse the preserved lemons, remove and discard pulp.
  • Cut rind into thin strips.
  • Whisk together lemon juice and the next 5 ingredients, adding lemon rind, tomato and the next 5 ingredients.
  • Toss well and chill for 1 hour.
  • Serve over greens.
